Everyone at once, confined to a crusade for stimulation. A tendency to piece together energy into figments of surreality. A subconscious spirit wandering among the ether. Where sometimes things are never out there to be found. The teams at Salud and Burial got together to riff on a favorite Plaza Midwood snack, the milkbread brown butter oatmeal cream pie (O.C.P.). This presented one of the better challenges we have seen in stout-making, and urged us to reach into our cocktail-making coffers for fat-rinsing these important flavors. A blend of 3 different Imperial Stouts, aged upon house-toasted oats, rum-washed in our kitchen’s brown butter, powdered cream cheese, sea salt and then vanilla beans aged in that same brown butter rum barrel.
